Quick & easy recipes: Mushroom and halloumi salad
A mushroom and halloumi salad is a wholesome yet quick and simple recipe to prepare. If you’re massively into halloumi like we are you will definitely appreciate this delicious meal!
INGREDIENTS
Mushroom and Halloumi Salad
1/3 cup olive oil
Mushrooms (sliced)
Baby spinach /lettuce of some sort
Tomatoes
Spring Onions
Halloumi (sliced)
Couscous (Optional)
Salad Dressing
1/3 cup olive oil
large lemon, juiced
2 garlic cloves crushed
Aromat or something similar
Method
Prepare your salad base; lettuce, tomatoes, spring onions and spinach. Combine the olive oil, lemon juice, garlic, and Aromat in a bowl and mix to create your dressing. Use a little of the dressing to brush over both sides of the halloumi and mushrooms. Combine the rest your dressing ingredients with your salad base.
Prepare your couscous (this can be precooked couscous from your local supermarket , couscous prepared in bags or your own homemade couscous) and combine with your dressing ingredients and salad base.
Preheat a lightly oiled barbecue plate on medium-high / under the grill in your oven. Cook the mushrooms for 5 minutes, turning occasionally until just tender. Remove to the bowl with your greens. Cook the halloumi for 1-2 minutes each side until perfectly crispy or 6-7 minutes under the grill. Add the halloumi to the mushroom and greens, ready to be served.
