Fig and Feta Tart

A great way to make a delicious and simple recipe is to pair up figs with feta for a quick Sunday tart, which you can make to serve to as few or as many of your loved ones.  One way to get creative is to see what other vegetables you have lurking in the fridge to work some autumn greens into the dish.

Ingredients

Puff pastry (ready rolled ) (any supermarket)

3 large figs

Half pack of feta cheese

Nuts (walnuts or pine nuts)

1 egg beaten for egg wash (with a brush or a fork can be used too for the same effect)

2 large red onions (for caramelised flavour also you will need: a spoon of olive oil, a tablespoon of brown sugar, a little drizzle of balsamic vinegar for glaze)

A dash of Black pepper

Honey & Fresh Thyme for serving

 

Method

1. Roll the puff pastry on the baking tray according to instructions, fold the edges of the pastry inwards to create an edge for the tart. Leave on the side for 10 min.

2. Slice the red onion into thin strips, add some olive oil to the pan and allow to cook on low to medium heat until soft (approx 7 min). Then add the sugar and balsamic glaze, mix well and cook another 3 min. before allowing to cool.

3. Preheat oven to 180C.

4. Layer the onions on to the pastry, thinly slice the figs and place them on top of the onions.

5. Crumble the feta on top and add nuts of your choice (we used the walnuts).

6. Brush the edges of the pastry with the egg wash and bake in the oven for 15 min at 180C till golden brown.

 

Serve with a sprinkling of fresh thyme and drizzle it with raw, runny honey. We love the mixture of sweet honey and salty feta cheese but if you don’t just enjoy as it is.

Here are a few more simple and easy food combo-ideas.

 

1. Pear/Peach and goat cheese with some rocket salad on top.

2. Tomato and mozzarella (try to use mixed colour tomatoes which lwill make your dish look beautiful).

3. Proscuitto, asparagus, peas and pesto.

4. Mediterranean grilled vegetables with feta.

5. Sweet ones: apple and cinnamon or peach and cream.
