Zesty lemon and poppy seed muffins
These lemon and poppy seeds muffins are so wholesome and full of flavour. They make a tasty afternoon treat and are one of our absolute favourites to whip up. This recipe includes Greek yogurt which keeps the inside deliciously moist!
INGREDIENTS
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup melted coconut oil
1/2 cup Sweetener
2 eggs
1/2 teaspoon lemon extract
2 tablespoons lemon zest
1 tablespoon lemon juice
1 cup Greek yoghurt
1 1/2 tablespoon poppy seeds
METHOD
Preheat oven to 180 C degrees and prepare the muffin liners and muffin tin.
In a medium bowl whisk together flour, baking soda, and salt.
In a separate bowl mix the coconut oil and Natvia together. Add the eggs and combine. Mix in lemon extract, lemon zest, lemon juice and greek yoghurt.
Add the dry ingredients to the wet ingredients and mix until combined. Fold in the poppy seeds.
Fill muffin tins about â…” full with muffin batter. Bake for 12-15 minutes until an inserted toothpick comes out clean.
Leave to on a wire rack for a few minutes before tucking in. And enjoy!
